A Week of Dinner?

It was my idea and I really had trouble making it work! About two weeks ago, I suggested that a bunch of us take pictures of our dinner and post them to give us all some new ideas for dinner. We all get into those ruts, don’t we? Well, turns out, it is really hard to remember to take pictures of dinner! I think most of us can relate to just wanting to sit down and eat when we are finished cooking – remembering to grab the camera isn’t easy! Deb over at My Life in CNY laments that she had the same problem.

Regardless of my mostly failed efforts to photograph my dinner, I’m going to share with you what I did manage to photograph in order to (1) maybe give you a few ideas and (2) hope that you’ll decide to post some dinner pictures, even if you don’t have a full week either!

The first shot I remembered to take was this one:

I found a recipe for this chicken stew with a biscuit topping all in one pot. Those biscuits were supposed to spend a little time under a broiler, but I don’t currently have one of those ( a story for another blog post perhaps).

The concept was good, but the result was a bit dry. Probably because I left it in the oven a little longer than was called for trying to brown those biscuits. Sarah said there was too much parsley in the biscuits!

Next remembered dinner was this:

Roast beef in the crock pot. Have I mentioned before how much I love crock pot dinners? Especially on busy school nights? I’ve done this one a few times now and it always comes out delicious and tender.

The last shot I remembered was this one:
BBQ Chicken pizza w/jalepenos
Homemade BBQ chicken pizza with jalepenos. This was easy. Store bought bag of dough, George Foreman grill-cooked chicken with some BBQ spice, bacon, BBQ sauce, cheese, jalepeno slices, VOILA!

I do have some links to recipes I’ve used in the last two weeks for dinner. There are pictures on the sites as well! If you are curious, here you go:
Some nearly homemade tomato soup – I served grilled cheese sandwiches with this of course!

This one was just “aw-ight”. I was looking for something different, quick and easy. The girls were not crazy about it: Asian Noodle Bowls with beef.

This was tasty, but in my opinion, required far too many pots and pans: Creamy chicken pasta

Last night, it was just Meghan and me for dinner on a Friday night after a long week, so we split a foot-long sub from Subway.

So there’s an almost week of dinner for you! I’d love it if you’d still like to share some dinner ideas with me. Doesn’t matter how many pictures you have – just post them and leave me a link.

In the meantime, Scott has a new photo assigment for us to work on. It is due on January 23rd, so pop over there and have a look! Maybe I can actually remember to take some photos for this one!

    • Ooh wouldn’t that be interesting? My sister says someone should be developing “smell-o-net” but that could be really tough to take when you are hungry!

  4. I’m impressed you remembered to take some photos!

    About a week ago I decided to join in on this challenge and made a lovely dinner, all prepared to take photos…then forgot….
    The next night, as I watched the three men I live with grab their plates of food and hurry out of the room, I decided I didn’t have any chance of ever successfully taking dinner photos, so decided against it altogether….I’ll just enjoy looking at other peoples photos and trying out their recipes (when winter arrives here!) πŸ™‚

    • It wasn’t easy Joanne! I had it in my head at some point each day since I suggested posting dinner pictures, but hectic dinner time came and went most days without the camera. If you do end up catching any dinner photos at all, I’d love to see them!

  5. I kept forgetting to take photos, too! I’m craving roast beef now. I wonder how many of these food posts will cause people to eat? LOL! Maybe it isn’t roast beef I crave. Maybe it’s the BBQ chicken pizza. It sure looks delicious. I better go grab a handful of veggies to munch on. I wonder if I can convince myself they are roast beef and BBQ chicken pizza?

    • Forgetting seems to be a common thread here Robin! I guess it just goes to show how busy and hungry we all are, lol! I’m impressed that I could make a vegetarian (but if I remember correctly you aren’t strictly vegetarian?) crave beef and chicken! πŸ˜‰

      • Not strict anymore. I finished up my year of vegetarianism back in September (well, really, it was pescetarianism since I allowed myself to eat fish when a healthy vegetarian dish wasn’t available and then I HAD to consume mass quantities of lobster when we went to Canada and Maine because it was lobster season). I’m still mostly vegetarian (often vegan). I don’t cook meat at home unless we have omnivore family and friends over, and on rare occasions will eat meat when I’m out now that the year-long challenge is over. Bacon, as far as I’m concerned, is the toughest meat to do without. There is no good vegetarian substitute. Now that I’m here again, I swear I can smell that roast beef… πŸ˜‰

      • You know, I’ve often thought I could definitely go with less meat, but that bacon would be very difficult to go without! Even though it isn’t used as a main course meat, it gives flavor to so many things! And I could definitely never go vegan as I am a huge fan of virtually ALL dairy products!

  8. Just read Dawn’s entry and of course it all sounded mouth-watering. That’s what you wanted us to do, right Karma–gain weight by virtual salivating? *grin* Will join the group and admit it was pretty much impossible to remember the photographing challenge. Think I took one picture and then…forgot. Will admire anyone who can combine their camera with cooking! Your homemade barbecue pizza looks amazing. Please pass some. I love anything barbecue and have been known to sample meat just to enjoy that barbecue taste again.

    • Honest, Kathy, I really was just looking for more everyday dinner kind of ideas! I get so tired of the same ol, same ol! And food bloggers are often out to impress with their fancy foods rather than every day stuff. The BBQ pizza was easy and yummy – and I’m sure you could do an easy veggie version! πŸ™‚

  9. You’re the only other person who knows how to spell, “Meghan” the right way! Isn’t it hard to find things with our girls’ name spelled the right way?

    Your dinners look quite yummy. I’m having a hard time finding stuff to make that serves just three, and one of us three is rather picky, too. He gets oatmeal or Campbells chicken noodle soup a lot for dinner! ; )

    • That is soooo true, Kate! Anytime I actually see something in a store with “Meghan” on it spelled the right way, I buy it because it is so rare!
      I went through that picky stage with my younger daughter Sarah – she’s 15 now and much better than she used to be, but can still be difficult to please.

  10. Guess what?! I’m planning on taking a picture of tonight’s dinner! πŸ˜‰ Even got the camera out and ready so I (hopefully!) won’t forget.
    Might take another one later in the week.
    That Subway sandwich looks really good….such a shame they don’t look like that when you actually order one. They seem to have gotten skimpy with the meat, and I prefer Quizno’s, do you have those in your area, too?

      • Should have the post up by tomorrow (possibly tonight)
        The Quizo’s here in town went out of business, too, then opened up under new ownership, and then went out of business again….and was replaced with a frozen yogurt place.

    • I could send you a much better chicken and biscuit stew type recipe if you are interested. It is a little more time consuming but tastes much better.

    • Sure thing Scott. I know you said winter isn’t all snow and cold, but we’re expecting a bit more tonight after it all just melted. Happy dogs playing in fresh snow says winter to me, so we’ll see!
      Lots of things I only cook in the winter – my oven gets used for dinner much more in the winter. As soon as it is warm enough outside I am back out at the grill!
